At first glance, the frushi maki in this photo looked like bananas with strawberries on top, which gave me an idea for a dessert/appetizer:
1. Take a slightly underripe banana and cut it into 1½-2"lengths
2. Partially core each length of banana, so that it becomes a sort of banana cup or shot glass**
3. Fill with diced/minced strawberry
4. Chill and serve!
I might try this at some point. The coring may prove too time-consuming, but it would be a hell of a payoff, I think. Does banana oxidize the way apples and other peeled fruits do? I might need to add a lemon juice wash.
*Frushi being a form of sweet sushi with fruit instead of fish. Served at Orange in Chicago and probably elsewhere. Basic recipe here.
**Ooh, shot glasses. That's a whole different application...
